Skordalia (Garlic Spread)

Skordalia, greek garlic spread, recipe from Patricia, our Greek tour leader. Garlic is  the keystone of Mediterranean Cuisine

 

Greek tour leader Patricia Hajifotiou shared her recipe for Skordalia with Paola a while back, and now she’s passing it on to the rest of us.

Paola says that the Greeks traditionally serve this tasty and versatile garlic spread with cod or bread, but she knows that you’ll find many more uses for it.

 

     

  • 1 medium potato, boiled and cooled

     

  • 2 cloves garlic, chopped

     

  • ¼ tsp. salt

     

  • ½ cup olive oil

     

  • 2 tsp. lemon juice or vinegar

     

  • a large handful of walnuts

     

Put everything, except the walnuts, in a blender and blend until smooth. Add a little water or olive oil if it is too thick. Add the walnuts at the end and blend until smooth. Chill before serving to allow more time for the flavors to mingle.
